Spam Fritters

I know that these are are either loved or loathed by people. In our house they are most definitely a loved meal.
We don't have them very often, which makes them even more of a treat when they are made and served with potatoes and mushy peas.

So simple to do:
1 tin of Spam
1 cup of plain flour
1/2 cup milk
pinch of salt
2-3 tbsp oil (for shallow frying), or deep fat fryer.

If you are using a deep fat fryer cook at 170°, for shallow frying cook on a high heat.

Remove the Spam from the tin and cut into 8 slices.
Make the batter by putting the flour, milk and salt in a shallow dish/bowl and whisk until smooth. The mixture should be thick to grip the Spam but if it seems too thick add a little more milk and mix.
Dip the Spam in the batter and place in the pan for 2-3mins each side, or 3-4mins in the fryer.
When cooked place in between 2 sheets of kitchen roll  and pat to remove excess oil.
Serve and enjoy.
